Mexican Beef and Rice Skillet
This Mexican Beef and Rice is a one skillet meal that’s easy for any weeknight. Its filled with tender beef, fluffy rice and lots of southwestern flavors.

If you ask anyone in our families what their favorite cuisine is, it will most definitely be Mexican food! It’s our favorite meal to eat out but since I am gluten free its hard to navigate. Since I cant have soft fluffy tortillas anymore I usually eat burrito bowls or nachos. But when I want to make it easy on myself I make this skillet meal. Its got everything you want in a burrito and all the yummy toppings for nachos.
Just brown your meat and onions, Add the seasoning and other ingredients, then cook until rice is tender. It doesn’t get much easier than that. Then you can either serve over a bed of lettuce for a taco salad or eat with chips. I like to top mine with sour cream, guacamole, and LOTS of queso. And just like any perfect family meal its so good leftover. Bonus its gluten free!

Ingredients
1 Small onion
3 Garlic Cloves
1 lb Ground Beef
1 can corn drained
1 can black beans drained and rinsed
1/2 can (3oz) Tomato Paste
1 Packet Taco Seasoning
1 tsp cumin
1 tsp chili powder
1 tsp paprika
1 tsp parsley
Salt to Taste
1 1/4 c white rice
3 c beef or chicken broth
1 1/2 c cheese (Mexican Blend, Monterey Jack, Cheddar or preferred)









Step by Step Instructions
1.In a large skillet brown ground beef, diced onion and garlic. Drain any excess grease.
2.Add seasoning and mix into the meat. Stir in Tomato Paste for a minute and then pour in broth. Stir until tomato paste is mix in thoroughly. Add in corn and black beans, stir.
3.Stir in white rice and bring to a boil. Once boiling turn down to low and cover for 25 minutes. I like to stir it once halfway through to make sure rice isn’t sticking.
4.Stir in half the cheese and then top with the rest. You can cover it with the lid until the cheese melts or put it in the oven on broil for a couple minutes. Serve with chips.
