This homemade lemon ice box pie is the perfect combination of sweet and tart! Its quick, easy, and a crowd pleaser at any summer gathering!

When I moved into my home my first priority was to have framed pictures of my nana’s handwritten recipes. I picked my top three recipes that reminded me of her and this one was a no brainer.
Lemon ice box pie was a staple dessert in our home. It was frequently requested for a cookout or birthday celebration. Then I met my husband and turns out this was also what his grandmother was known for.
They used the same recipe other than the lemon juice. My nana always just used some in a bottle, but his Mamaw used freshly squeezed. As a result his memory included a much more tart version of this pie.
Over time I mastered the exact amount of lemon juice to use to keep us both happy. Of course, to no ones surprise all our kids love this pie as well! Its just so simple and so delicious!

How to Make Lemon Ice Box Pie


Step 1: In a bowl combine the graham cracker crumbs, sugar, and butter. Press the mixture into a pie dish. Bake at 350 for 10 minutes. Let sit while making filling.


Step 2: In a medium sized bowl combine lemon juice, egg yolks, and sweetened condensed milk. Pour into pie crust and bake for 20 minutes.

Step 3: Let cool on the counter and then place in the fridge for storing.
Tips for Making Lemon Ice Box Pie
- If you do not prefer a tart pie add less lemon juice. For an extremely tart pie add more lemon juice.
- You can also use a store bought pie crust. When I do that I buy the crust that has two extra servings and is bigger.
- Cool whip is a delicious topping!

- 2 cups graham cracker crumbs
- 1/3 cup sugar
- 1 stick salted butter, melted
- 2 cans sweetened condensed milk
- 1 1/2 cups lemon juice
- 4 egg yolks
Instructions
- In a medium sized bowl add graham cracker crumbs, melted butter, and sugar. Stir until combined.
- In a deep pie dish pour the crust into the dish. Use your hands and the back of a measuring cup to press it into the dish and up the sides.
- Bake the pie crust in a 350 degree oven for 10 minutes. Take out of oven to pour in the pie filling.
- In the same medium sized bowl add the sweetened condensed milk, lemon juice, and egg yolks. Stir until combined and pour into pie dish.
- Bake the pie for 20 minutes at 350. Let cool completely on the counter and then keep in the fridge.
Notes
