White Chicken Chili

This white chicken chili is the perfect cozy crockpot meal on a fall/ winter day. It is so easy to just dump in the crockpot and enjoy on a cold day. You can top it with sour cream, avocado, shredded cheese or whatever you desire. We love eating this white chicken chili with cornbread or frito’s.

If there is one recipe that my husband asks for over and over again in the fall and winter its this one. He absolutely loves all types of chili but this is by far his favorite. Its one of those recipes that seems involved due to all the ingredients but even my husband can make it. I love how versatile chili is because we can switch up some of the ingredients to whatever we have on hand and its always amazing.

You can choose to make this on the stovetop for a quicker meal or low and slow in the crockpot (which is always my choice). I usually make this chili with chicken breast but you can keep it easy and throw in some already cooked chicken or rotisserie chicken that you have shredded up. We make this one with more mild spice but sometimes I kick it up a notch and use fire roasted tomatoes and a little extra chili powder for a spicier version and love it. The cream cheese cuts through the spice and makes it so creamy and delicious. You cant go wrong with this one and I hope you enjoy.

Tips and Tricks

  • This white chicken chili can be made gluten free so easily by using a homemade spice blend. See my white chicken chili seasoning here.
  • You can subsitute so many of these ingredients to what you have on hand.
    • I have used bush’s white chili beans before (these are not gluten free), pinto beans, ranch style beans, black beans or cannellini beans. I usually got with a great northern bean but any bean works here.
    • You can use whatever tomato you would like here. I prefer fire roasted because I love the flavor and spice it adds but you can use diced tomatoes, rotel or rotel chili fixins.
    • If you want it more soupy and not as creamy than you can omit the cream cheese and thickin it with a cornstarch slurry.
    • This is great with green chilis but you can use poblano peppers as well.

Ingredients

1lb chicken breast
1 packet ranch seasoning
1 packet white chicken chili seasoning or homemade
1 small onion diced
32oz chicken broth
1 can diced tomatoes or fire roasted tomatoes
1 can corn
1 can diced green chilies
1-2 cans white beans or black beans
1 block cream cheese

Step by Step Instructions

  • Dump all ingredients into the crockpot making sure the cream cheese is cut into small pieces. Mix until combined and then nestle in the chicken breast until they are fully covered.
  • Cook in crockpot on high 4-5 hours and low 7-8 hours.
  • If using the stovetop you can dump all ingredients into a dutch oven and simmer for 30 minutes – 1 hour. Then add in your pre-shredded chicken and serve.
