There is something about cake cookies that make them extra delicious. They create such a chewy texture. My favorite part has to be the initial taste of powdered sugar when you go to take a bite. Who doesn’t love powdered sugar!

I keep cake mixes on hand in my pantry just so I can pull these together at a moments notice. They are a go to for any event or even gifting at the holidays. I love adding cake cookies to my christmas treat boxes or tutor/bible class teacher gifts.

Simple and Easy- I love a recipe that pretty much requires simple mixing. It allows my kids to get involved and help me knock them out. Mix, scoop, roll in powdered sugar, and bake. It’s really that simple!!

Spice cake, red velvet, chocolate, funfetti, carrot, lemon, etc. Just pick a cake mix and then decide what you are going to mix in. Add in chocolate chips, sprinkles, nuts, etc.

Perfect for a Theme- I love something that matches a theme! These strawberry cake cookies are perfect to add to a valentines spread. Throwing a baby shower for a girl, these are great for that too. Any event that has the color pink, just add these to your menu and they will blend in perfectly!

How to Make Strawberry Cake Cookies

Step 1: Cream together the butter and cream cheese until smooth.

Step 2: Add in one egg and 1 tsp vanilla.

Step 3: Beat in the cake mix until smooth.

Step 4: Add in white chocolate chips if desired.

Step 5: Use a 1 Tbsp cookie scoop and scoop your dough. Roll it in a bowl of powdered sugar. be sure to coat heavily.

Step 6: Place on a parchment lined baking sheet.

Step 7: Bake at 350 degrees for 10 minutes. When you remove them from the oven slam them on the counter to help them spread and flatten. Do not over bake!

Step 8: Let them cool on a cooling rack.

These make such a beautiful dessert!

Tips for Making Cake Cookies

  • These are extra delicious with the addition of white chocolate chips!
  • Do not over bake these cookies. You do not want them too browned on the bottom. They are supposed to be soft and chewy.
  • Heavily roll in powdered sugar because it will spread out over the entire cookie while baking.
  • Don’t forget to slam them on the counter.

Ingredients

  • 1 stick softened butter
  • 1 8 oz block cream cheese
  • 1 egg
  • 1 tsp vanilla
  • 1 strawberry box cake mix
  • powdered sugar

Instructions

  1. Cream together the butter and cream cheese until smooth.
  2. Add in one egg and 1 tsp of vanilla. Beat in the cake mix until smooth.
  3. Use a 1 Tbsp cookie scoop to scooop your dough and roll it in a bowl of powdered sugar. Be sure to coat them heavily.
  4. Place on a parchment lined baking sheet.
  5. Bake at 350 degrees for 10 minutes. When you remove them from the oven slam them on the counter to help them spread and flatten.

Notes

  • These cookies can be made with all sorts of combinations. Some suggestions: Red velvet with white chocolate chips, yellow cake with mini chocolate chips, spice cake, carrot cake with walnuts.
  • Do not overbake the cookies, you do not want them to be too browned.
  • Heavily roll them into powdered sugar!!!!!
  • Don't forget to slam them on the counter.
