Spicy Sausage Potato Corn Chowder

Spicy sausage potato corn chowder is made in one pot for easy cleanup. Its loaded with spicy sausage, potatoes, fresh or frozen corn, onions and cream. This chowder has a surprise spicy kick from the sausage which gives it great flavor. I love eating this is the fall and winter with frozen corn that I put up in the summer but making this in the summer when corn is fresh takes it up a notch.
Whether you are wanting to curl up by the fire, gathering with family or just craving something hearty and comforting this chowder is sure to be happy in a cup. The potatoes give it bulk, the corn gives it a sweet freshness, sausage makes it nice and spicy, and the cream makes it luxurious. It’s got all the flavors you would need such as sweet, spicy with savory herbs.
Tips and Tricks
- You can use any corn you have on hand such as fresh, frozen or canned. If you don’t have homegrown corn that has been frozen I love using frozen fire roasted corn. Especially this one from trader joes.
- This soup is a great way to use up some of those potatoes rotting in the back of you veggie drawer. You can add whatever other veggies that need to be used up as well. If you don’t have any potatoes on hand I love using my home canned potatoes.
- I love a creamy chowder and this one definitely delivers but you can make it less fattening by using half and half or whole milk. You can also take it up a notch by adding 4-8 ounces of cream cheese to make it extra creamy!

Ingredients
- 1lb hot sausage
- 4-5 peeled and diced potato’s
- 4 cups chicken broth
- 1 1/2c corn( fire roasted, canned, frozen or fresh)
- 1 onion diced
- 1/2tsp thyme
- 1 cup heavy cream
- Salt and pepper to taste
Step by Step Instructions
1. In a large Dutch oven brown sausage and onions. Drain excess grease if needed.
2. Then add in chicken broth, thyme and potato’s. Bring to a boil and cook for 15-20 minutes until potato’s are tender.
3. Add in corn and cook for 5 minutes.
4. Add in heavy cream and warm. Then serve!

Notes
If dairy free then you can use coconut cream or milk in place of the heavy cream.
