This egg salad is a southern staple for gatherings! Its a crowd pleaser when served on sourdough bread or with a side of crackers!

I am going to be real honest with you, I hate boiled eggs. I know the irony that I would be putting a recipe on here of something that I don’t even eat myself. Anyone who is married knows that if your husband or kids love a certain food that you will figure out the best way to make it no matter if you like it or not.
That’s exactly where this recipe came from. My husband loves egg salad and would eat it all the time. Not only that but we have chickens now and are overflowing with eggs. I need to make any recipe I can find that uses up eggs.
I have had so many people who love egg salad be my taste testers for this one. Either they are lying or I really did master this egg salad recipe. They all eat it up so I am thinking it’s as good as they say.

Uses Eggs- This would only be a positive if you are like me and have your own back yard chickens. If you are going to the grocery store to grab eggs then you have very different opinions of this right now. But for all of us that are overflowing with spring eggs, this recipe is perfect for using some up!
Protein Rich- We all know how important protein is to our daily diet. This egg salad will help you get some much needed protein in your day. You can eat it as a sandwich for lunch, but it would also be great to start your day on some sourdough toast. My sourdough recipe is here.
Quick and Easy- Other than boiling eggs this recipe simply requires some measuring and stirring. It comes together really quickly! For me trying to peel those fresh eggs wasn’t easy, haha, but overall this recipe is super fast and easy.

How to Make Southern Egg Salad


Step 1: Wash and boil eggs. I used my instant pot this time but I think I still prefer the stovetop method.
Step 2: Put hot eggs in an ice bath and peel eggs.


Step 3: Chop boiled eggs and place in a medium sized bowl.
Step 4: Add in mayo, mustard, and spices.
If you prefer sweet relish then add about 1/3 cup to your egg salad! This is my husbands preferred method and he enjoys his on simple white bread.

Notes
- Boiling eggs can be done so many different ways. I have been trying different methods since I now have fresh eggs and peeling them is hard. I’m still figuring that part out. If you have a preferred method to boiling eggs do whatever is easiest to you!

Ingredients
- 9 boiled eggs
- 1 tbsp mustard
- 1/2 cup mayo
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp onion powder
- 1/8 tsp pepper
- Sweet relish optional
Instructions
- Clean and boil eggs. Put straight into an ice bath and then peel them.
- Dice up your boiled eggs and add to a medium sized bowl.
- Add in mustard, mayo, and spices.
- Serve on toasted sourdough or white sandwich bread. Add in sweet relish if desired.
Notes

- The relish is a great addition to this recipe! However even when I made it recently I had some people who wanted it and some who didn't. Its easy to add in for those who like the added sweetness.
