This recipe for sourdough discard waffles combines simplicity with the perfect waffle. They turn out so soft, chewy, and delicious. It is certainly a recipe I reach for weekly in my home.

Using sourdough in your home doesn’t have to be complicated. I love using it in simple ways that make me feel better about what I am feeding my family. One of those ways is using up the discard in different recipes.

My kids have two favorite recipes that use up our discard. The first is our sourdough cheesy puffs, you can find those here! The second is this recipe for sourdough discard waffles. My kids like these so much it is frequently their request for breakfast on their birthday!!

  • Simple- This recipe is as simple as measuring ingredients and stirring them together. It makes for a great starter recipe for older kids that want to help out. Leave out your recipe card and let your kid make breakfast for the family!
  • Discard- It seems most people that have a sourdough starter don’t know what to do with their discard. This is a great way to use some of that discard in your fridge up. It will also most likely become a weekly way in which you use it up also!!!
  • Versatile- If your kids are like mine they each like their food a different way. One likes syrup and one doesn’t. One likes mini chocolate chips and the other fruit topping. Waffles allow you to make everyone happy for breakfast. That really is the biggest win as a mom!!

How to Make Sourdough Discard Waffles

Step 1: Add all ingredients except for the baking soda to a bowl. Mix together! (Be careful with your eggs and butter, you don’t want to scramble your eggs) TIP: Add eggs last after mixing everything with the butter.

Step 2: Add in your baking soda so it gets bubbly.

Step 3: Pour batter in to a hot waffle iron that has been sprayed. I put my waffle iron at a 2-3 so it doesn’t cook them too hot.

Step 4: Pull them out once they are golden brown!

Step 5: Continue the process till you have made all your batter.

Step 6: Enjoy!!!

Tips for making Waffles

  • Be sure your waffle iron is well greased before pouring in your batter. This will keep it from sticking once it is finished.
  • You may want to mix the ingredients with the butter first and then add in the eggs. No one wants scrambled eggs in their waffles.
  • This recipe only makes 3 large waffles. Double or triple it as needed. I like having recipes that only make what I need for my family.
  • Don’t forget all the yummy toppings! My kids favorite is either topped with mini chocolate chips or Nutella with banana. I love a classic butter and hot syrup!

Sourdough Discard Waffles

These sourdough discard waffles are the perfect small batch recipe. They only take minutes to whip up and will have your kids begging for them every morning!

Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 1/2 cup sourdough discard
  • 3/4 cup AP flour
  • 1/2 cup milk
  • 1/4 cup melted butter
  • 1 TBSP brown sugar
  • 1 egg
  • 1/2 tsp salt
  • 1/8 tsp baking soda

Instructions

  1. In a medium sized bowl add all ingredients except for baking soda and whisk together.
  2. Add in baking soda and watch it get a little foamy.
  3. Pour a third of the batter into a hot waffle iron. I like to give mine a little non stick spray.
  4. Cook until golden brown and continue cooking the other two waffles.

Notes

  • This is a small batch recipe that only makes three full sized waffles. If you need a larger quantity just double the recipe.
  • Sourdough discard is starter that isn't bubbly. I typically pull cold discard out of the fridge.
  • Our favorite toppings are mini chocolate chips, butter with hot syrup, peanut butter chips, nutella with bananas, or peanut butte and hot syrup.
  • These can easily be made with alternative flours.
