One Pan Sausage and Potatoes (GF)
This one pan wonder is so quick and easy to whip up on a busy night. The sausage and potatoes get nice and crispy. This recipe is sure to be a hit!
This recipe is one that is great to fix on a busy night when you didn’t have time to plan anything for dinner. We most always have some sausage in the fridge and its a great protein to keep on hand. And who doesn’t have potatoes and onions in the fridge or pantry at all times. I love that you don’t have to dirty up any bowls and its a quick clean up to just throw away the parchment paper when done.
We love to make this with peppers as well if we have some on hand as they add a different flavor profile. The options are endless with the variations you can do. That’s why this is a great recipe to have in your back pocket. I will say if you are feeding more than 3-4 people I would do 1 1/2 of this recipe to make sure there is enough.
Why You’ll Love These
- QUICK! This is so quick to throw together. It takes minimal chopping and dicing. It comes together in less than 10-15 minutes and then you just have to wait for it to bake.
- Odds and Ends: I always have a half and onion laying around or a few potatoes left in the back of the fridge. This is a great way to use up leftover veggies without throwing them away.
Ingredients
- Kielbasa– You can use multiple varieties and switch up the flavor profile. Cajun or spicy sausage works great here.
- Potatoes– Yukon gold is what I prefer because they taste like butter when baked like this but russet works great as well.
- Onion– You could use any onion you have on hand. I used Vidalia but white onion or red onion would work here.
Step by Step Instructions
- Diced potatoes into 1 inch cubes. Chop onion into large pieces. Slice sausage links into bite size pieces.
- Line a cookie sheet with parchment paper. Add potatoes, onions and sausage to the pan. Drizzle with olive and sprinkle on seasonings. Make sure everything is coated evenly.
- Bake at 400 for 40 min stirring at 20 min. Then take pan out of oven and add cheese on top. Return to oven for 2-4 minutes or until cheese is melted.

Notes
You can use any sausage you would like. I used the polish sausages from Costco but Cajun sausage or apple smoked would be nice as well.
You can use Russet or Yukon gold potatoes. If using russet you will probably only need 4 potatoes.
I personally use cajun seasoning as it adds a great flavor but a good quality season salt would work great as well. You can add more or less depending on how spicy you want it.
