Italian Grinder Roll ups
These Italian Grinder Roll ups are packed with flavor and perfect for any party or gathering.

When the Italian Grinder Sub trend started I was hooked. I had them multiple times a week and never got sick of them. I now have made them into chicken salad, pasta salad, salad and now tortilla rollups. There are a few variations and you can really customize them to what you like. These are perfect to bring to a party or gathering. I love a food that you can keep coming back for more and don’t need a plate or utensil for.
Now that I am celiac I prefer eating my Italian Grinder in the form of a salad or chicken salad. How I wish I could eat it on a large sub roll. You can make these gluten free by substituting the tortilla. I will say I have found I don’t prefer the store bought gluten free tortillas room temp and like to warm them up. Since this is a cold wrap I would suggest using the brand Toufayan gluten free wraps as they are the most pliable.

Tips and Tricks
1. If you want to make these ahead of time wrap the tortilla rollup in plastic wrap and store in fridge. Cut when ready to serve.
2. To make cutting easier I suggest adding a couple toothpicks to hold the rollups together.
3. Great additions… Tomatoes, Ham, Turkey, Italian Seasoning, Capocollo.
4. If you don’t have pepperoncini’s you can substitute with banana peppers.

Ingredients
4 Burrito Size Tortillas
8oz Salami
8oz Pepperoni
8 slices Provolone Cheese
1/4-1/2 sliced white or red onion
Lettuce (I prefer iceberg or romaine)
Cream Cheese Spread
4oz cream cheese softened
1 tsp oregano
1/2 tsp garlic powder
1 tbsp Olive Oil
1 tbsp Red Wine Vinegar
1 tbsp pepperoncini brine
1/2 cup mayo
1/4 cup parmesan cheese
2 tbsp chopped pepperoncini’s








Step by Step Instructions
- In a mixing bowl mix together the following to make cream cheese spread. Cream cheese, Mayo, Red Wine Vinegar, Olive Oil, Pepperoncini Brine, Chopped Pepperoncini’s, Parmesan, Oregano, Garlic Powder.
- Spread cream cheese mixture on tortilla. Layer on Provolone Cheese, Lettuce, Salami, Pepperoni, Onion.
- Rollup and slice into rounds.
