I love a recipe that’s easy for the kids to be involved. This recipe is super simple and such a fun sweet treat for you to make with your kids. We did butter with holiday sprinkles for a Christmas party. You really can’t go wrong with whatever combination you choose.

How to Make Funfetti Cake Cookies

Step 1: In a medium sized bowl cream together the butter and cream cheese.

Step 2: Add in the vanilla and egg.

Step 3: Add in the cake mix until smooth.

Step 4: Stir in the sprinkles, or whatever mix in of choice.

Step 5:Using a 1 Tbsp cookie scoop, scoop the dough and roll into a bowl of powdered sugar. Place on a parchment lined baking sheet.

Step 6: Bake at 350 degrees for 10 minutes. Slam the baking sheet onto the counter immediately once you pull it out of the oven.

Tips for Funfetti Cake Cookies

  • Do not over bake these cookies. They should not be browned on the top, but still gooey in the center.
  • Be sure you heavily coat the cookies in powdered sugar!
  • Slam the cookies on the counter to help them flatten.
  • Switch out the cake mix flavor and the mix ins to create different flavor profiles.

Ingredients

  • 1 stick softened butter
  • 1 8 oz block cream cheese
  • 1 egg
  • 1 tsp vanilla
  • 1 box cake mix (these used butter flavor)
  • Sprinkles
  • Powdered Sugar

Instructions

  1. Cream together the butter and cream cheese until smooth.
  2. Add in one egg and 1 tsp of vanilla. Beat in the cake mix until smooth.
  3. Stir in the mix-ins, for these I used sprinkles.
  4. Use a 1 Tbsp cookie scoop to scoop your cookie dough and roll it in a bowl of powdered sugar. Be sure to coat them heavily. Place on a parchment lined baking sheet.
  5. Bake at 350 degrees F for 10 minutes. When you remove them from the oven slam them on the counter to help them flatten.

Notes

  • These cookies can be made with any combination you prefer. Some suggestions: red velvet, strawberry with white chocolate chips, yellow cake mix with mini chocolate chips, spice cake, or carrot cake with raisins or walnuts. So many possibilities!
  • Do not overbake the cookies, you do not want them to be too browned.
  • Heavily roll them in powdered sugar!
  • Don't forget to slam them on the counter right out of the oven.
