One of my favorite parts about the holiday season is all the treat making. This is one of the first to be made every year. Our sweet cinnamon chex mix is a family staple every year around the holidays. We look forward to filling up a bowl and popping each piece in our mouth as we watch our favorite Christmas movies.

Christmas Cinnamon Toast Chex Mix
Warning: Our sweet cinnamon chex mix is extremely addicting. The cinnamon chex mix is coated in a brown sugary mixture that keeps you coming back over and over. It is the perfect Christmas gift and treat at the holidays!
Ingredients
- 4 cups Chex cereal
- 4 cups Cinnamon Toast Crunch
- 2 cups pecans
- 1/2 cup light corn syrup
- 1/2 stick butter
- 1/2 cup brown sugar
- 1 tsp vanilla
- 1/2 tsp baking soda
Instructions
- Preheat oven to 250 degrees.
- In an aluminum pan, either two 9x13 pans or one extra long pan, combine the cinnamon toast crunch, chex, and pecans.
- In a 2-4 cup bowl, silicone, or glass measuring cup add corn syrup, butter and brown sugar.
- Microwave for one and a half minutes. Stir. Microwave in 30 second increments until mixture is boiling.
- Add in vanilla and baking soda. It should start to bubble up and look foamy.
- Pour mixture evening over cereal and stir to combine.
- Bake for one hour. Set timer for every 20 minutes and give it a stir.
- Pour out onto wax paper to let dry. It won't take long to dry. Break bigger clumps up into smaller pieces.
- Store in air tight container.
Notes
Highly recommend using the aluminum pans for baking the mix. It will be extrememly difficult to clean your baking dish. Love yourself and use something you can throw away!!!!
I have made this with cashews and walnuts as well. It is just as good no matter what type of nut you use. I go back and forth between pecans and cashews when I make the mix. Or I combine them!!
Watch the microwave to be sure your sugar mixture doesn't overheat and overflow into your microwave. Speaking from experience!
