In our house we eat Italian at least once a week. I have such a love for any pasta, so when I was diagnosed with celiac I was devastated. I tried every gluten free noodle under the sun and hated them all. (Even the most popular ones such as Jovial) I have very high standards when it comes to finding gluten free alternatives. I finally ran across Rummo Gluten Free noodles and they changed my life. The key is to cook them a few minutes longer than the package says but when I say they taste incredible I am serious! I have made them for some many of my family members and they are SHOCKED. My favorite is the spaghetti noodles and the elbow noodles.
It is hard to have Holiday meals together and have to make everything separate. So my goal is to find alternatives that are just as good and everyone partake in the gluten free version. For Christmas we made our homemade mac and cheese with the elbow noodles and everyone went back for seconds. So this recipe is so easy to make gluten free by using gf noodles of choice but let me influence you to try the Rummo noodles if you haven’t already.

This recipe was a huge TikTok trend and even thought I don’t have TikTok I definitely saw this all over social media. I made this pasta bake originally with feta cheese instead of Boursin and my husband wasn’t a fan so I never made it again. Then when I saw the same recipe made with Boursin garlic and herb I knew I had to try it. I absolutely love this pasta dish and its bright and fresh flavors from the fresh tomatoes. You can of course double my recipe to make enough for a larger family. This is such a quick weeknight meal and an easy way to use up any leftover tomatoes you have laying around the fridge.
Tips and Tricks
- I am only making this to feed myself and my husband so we only use 1 Boursin and a small container of cherry tomatoes. If you have 4+ people in the family I would suggest using 2 Boursin and 1 large container of cherry tomatoes.
- If you like texture and don’t mind the tomato skins then you can easily just smash the tomatoes and Boursin together once cooked. I personally don’t like the texture of the skins. You can use a blender of food processor to blend the sauce together before adding the noodles.
- You can easily add different seasonings to your liking. I would suggest Italian seasoning, oregano or red pepper flakes.

Ingredients
-Boursin garlic and herb
-Cherry tomato’s
-Garlic
-Olive oil
-Basil
-Salt and Pepper
-Noddle’s of choice



Step by Step Instructions
1. In a casserole dish drizzle a little olive oil and place 1 Boursin cheese in the center of the pan. You can use 1 or 2 depending on how many people your feeding.
2. Then add 1 carton of tomatoes around the cheese and as much of each seasoning as you want. I did 4 minced garlic cloves, 1/2 tsp basil, 1/4 tsp pepper and 1tsp salt.
3. Then drizzle with olive oil and bake at 425 for 30-35 min. You can either smash the tomato’s and cheese together and eat it as is or blend it. I personally prefer to pour mine into a blender until its nice and smooth.
4. Add in cooked and drained pasta of choice.

- 3-4 garlic cloves minced

- 1 tsp Basil
- 1 tsp Salt
- 1/4 tsp Pepper
- 12 ounces Noddles of choice
