Since being diagnosed with celiac this year I have been trying to find and create gluten free recipes that taste amazing. I have tried so many desserts that taste “gluten free”. If you cant have gluten then you know what I mean by that. I want to make something gluten free that anyone who can eat gluten wouldn’t be able to tell. So I sent a piece of this cake home with my mom who is very vocal about her hate for all things gluten free and she devoured it. It is nice when creating recipes to have a tough critic who will speak their mind. My husband on the other hand tells me everything i make is amazing, which is sweet but not helpful when developing recipes. This cake truly taste so good and is something I would make over and over again.

Tips and Tricks

  • Make sure you liberally grease the bundt pan so it releases from the pan easily. It helps to add a lot of the cinnamon sugar to the pan before adding the batter. This helps add a layer between the batter and the pan and makes it much easier to pop out.
  • Make sure when using a Gluten Free 1 to 1 flour that it contains xanthan gum. I prefer using Bobs Red Mill in this recipe.

Ingredient Ideas

  • This recipe is best made with a crisp and slightly tart apple. I prefer honey crisp or granny smith but you can use whichever apple you have on hand.
  • The apple butter is used to help moisten the cake but can easily be subbed for applesauce. Both will give a slightly apple flavor while adding moisture.
  • You can omit the caramel sauce and eat this cake as is. The cake is covered in cinnamon sugar and is sweet enough on its own. I personally think the caramel makes this cake more decadent and special. I also like using the extra caramel in my morning lattes!

  • Brown Sugar
  • Sugar
  • Apple Butter
  • Butter
  • Apple
  • Eggs

Step By Step Intructions

  1. Preheat oven to 350 degrees.
  2. In the bowl of a stand mixer add softened butter, brown sugar and sugar. Whip for 2-3 minutes or until light and fluffy. Scrape down the sides of the bowl.
  3. Whisk together your dry ingredients. Combine flour, baking soda, baking powder, cinnamon, nutmeg and salt.
  4. To the wet ingredients add the eggs and vanilla until well incorporated.
  5. Then add in half the apple butter and mix for a few seconds before adding half the dry ingredients. Then add the remaining apple butter and dry ingredients until just combined.
  6. Add the grated apple and fold into the batter.
  7. Take your bundt pan and grease it liberally then sprinkle with the cinnamon sugar mixture. Make sure you get a nice even coat.
  8. Bake the cake for 50-55 minutes or until a toothpick comes out clean.

Apple Butter Bundt Cake GF

Gluten Free Apple Butter Bundt Cake. This gluten free apple butter cake is spiced perfectly with a moist crumb. The caramel sauce takes it over the top!

Ingredients

  • For the Apple Butter Bundt Cake:
  • 2 1/4 cups gluten free 1 to 1 flour (I prefer Bob's Red Mill)
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 cup butter softened
  • 3/4 cup brown sugar
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup apple butter
  • 1 large or 2 small apples grated
  • 2 tbsp sugar + 1tsp cinnamon for lining the bundt pan
  • For the Caramel Sauce:
  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla
  • pinch of salt

Instructions

  1. Preheat oven to 350 degrees.
  2. Combine all dry ingredients in a bowl and whisk. Combine flour, cinnamon, nutmeg. baking powder, baking soda and salt.
  3. In the bowl of a stand mixer add the butter, brown sugar and sugar. Beat for 2-3 minutes until light and fluffy.
  4. Add in the eggs and vanilla and beat until incorporated.
  5. Then add in 1/2 the apple butter and mix well. Then add in 1/2 the dry ingredients and mix well. Once combined add the remaining apple butter and dry ingredients until just combined.
  6. Add grated apples and fold them into the batter.
  7. Mix 2 tbsp sugar and 1 tsp cinnamon. Spray the Bundt pan generously with oil and then sprinkle with cinnamon sugar mixture. Make sure the pan is evenly coated with the sugar mixture as this will help the cake release from the pan easily.
  8. Fill the pan with the batter making sure the batter is evenly distributed.
  9. Bake cake for 50-55 minutes or until a toothpick inserted comes out clean.
  10. Remove cake from the oven and let cool for 10 minutes before turning it onto a cooling rack. If desired brush cake with butter and sprinkle with cinnamon sugar.
  11. Serve as is or with homemade caramel sauce.
  12. To make the caramel sauce melt butter in a saucepan over medium heat. Add brown sugar and whisk for 1 minute. Add the salt and cream and bring mixture to a boil, stirring constantly. Boil for 4 minutes stirring continously. Remove from heat and stir in vanilla. Serve warm drizzled over the cake.

Notes

- I used Bob's Red Mill 1 to 1 GF flour but you can use your favorite GF measure for measure flour. Just make sure that the flour contains xanthan gum.

-I recommend using a honey crisp or granny smith apple but you can use whatever you have on hand.
