Fresh Strawberry Pie

This Fresh Strawberry Pie is the perfect thing to make when craving the taste of Spring. When strawberry season comes around mid Spring I go to the farm and buy flats of them. I of course make enough strawberry jelly to last the year but I also freeze A LOT of them. My son loves smoothies and so I like to make sure we have enough in the freezer to last us until the next berry season.
When March rolls around and your seasonal depression has got the best of you sometimes it helps to bake something fruity and fresh. I love making this pie with fresh strawberries when they are in season but if I am making this any other time of the year I like using up my frozen strawberries. This is a great way to use up some frozen fruit in order to make room for the new fruit coming in. If using frozen fruit I like to thaw it overnight in the fridge and then drain the juices off of it. I use this juice in place of the water that is called for in the pie. No matter how you make it you will absolutely love it.

Tips and Tricks
1. If you are wanting a gluten free version of this pie I suggest using the Wholly Wholesome GF pie crust from the freezer section.
2. If using a pastry crust I like to wet my fingers with a little water and coat the edge of the crust. Then sprinkle some sugar on the crust before baking.
3. You can also use frozen strawberries for this pie. I like to use the juice from the frozen strawberries once thawed for my 1 cup water so I don’t waste any flavor. If you don’t have exactly 1 cup then fill the rest of the way with water.
4. This pie is wonderful in a pretzel or graham cracker crust as well.
5. Also for a healthier cool whip alternative I use Truwhip. They also have a dairy free version as well.

Ingredients
2 cups fresh or frozen strawberries sliced
1 cup sugar
1 cup water or strawberry juice
2 tbsp corn starch
4 tbsp strawberry jelllo
pinch of salt
Pie crust of choice (Pastry, pretzel or graham cracker)



Step by Step Instructions
- Prepare pie crust by baking it while you are preparing the strawberry mixture. Follow instructions on the package or use a homemade crust if desired. Just make sure it is fully cooked as you will not be placing the pie in the oven once strawberry mixture has been poured in.
- Take your fresh strawberries and wash thoroughly. Slice into desired size chunks ( I usually slice each strawberry into halves or forth depending on size.
- In a saucepan whisk together the sugar, cornstarch and pinch of salt. Add one cup of water and bring to a boil over medium high heat stirring frequently.
- Once mixture thickens after a couple minutes of boiling add the strawberry Jello and let boil a couple minutes. Add in your 2 cups strawberries and cook for a few minutes.
- Once pie crust is cooked and ready pour in your strawberry mixture and place into refrigerator overnight or at least 4 hours until Jello mixture sets up. Top with cool whip or whipped cream. Serve Cold.
