Corn Dip (Gluten Free)
This simple corn dip is so easy to whip together in a pinch. Its cold and creamy which makes the perfect party snack.

I learned this recipe when visiting a college roommate many years ago. She made this corn dip and it was so simple with only a few ingredients but I couldn’t stop eating it. Since then I have made this dip many different times and it is always a hit. I usually make this anytime I have a party or family in town for a quick and easy snack to pull out when I have hungry kiddos who are impatient.
This corn dip only requires a few ingredients of which you may already have on hand. The combination of corn, cream cheese, butter, rotel and ranch seasoning is so good paired with corn chips. (These are my favorite ones from trader joes)
This dip is one that you can almost always whip up with whatever you have on hand. I love to substitute the shoepeg corn for fiesta corn or fire roasted. If you don’t have ranch dressing mix on hand I often use the fiesta ranch or green onion mix. Sometimes I been short on cream cheese so I add in some sour cream or mayonnaise to make sure it is creamy enough. You honestly cant go wrong with this dip.

Ingredients
- Cream cheese
- Butter
- Rotel
- Ranch Seasoning
- Shoepeg Corn
Step by Step Instructions
- In a bowl stir together butter and cream cheese until smooth.
- Add in corn, drained rotel and ranch seasoning. Mix until combined and refrigerate.
Corn Dip

Corn dip is a great and easy make ahead appetizer for any party or family gathering.
Ingredients
- 1 block cream cheese softened
- 1 stick butter softened
- 1 packet ranch dressing mix
- 2 cans shoepeg corn
- 1 can rotel drained
Instructions
-Mix together the cream cheese and butter. This is easiest with a hand mixer.
-Add in the remaining ingredients and mix until well combined.
Notes
-For Smoothest consistency use a hand mixer to mix the cream cheese and butter.
-You can subsitute shoepeg corn for mexicorn or fire roasted corn.
-You can use the fiesta ranch packet as well to add more flavor.
