Growing up Hamburger Helper was a staple in our weekly rotation. It carries such nostalgia for me to make those same meals for my kids. This recipe has all of that without all the perservatives and unwanted ingredients. Its so delicious and a kid favorite!

I’m always trying to find new recipes to add to our rotation that don’t involve processed foods from the grocery store. This means lots of cooking from scratch which can feel daunting. The good news is I have found cooking from scratch to be just as quick and easy as buying a box of hamburger helper for a quick fix supper. This recipe takes the same amount of time and effort but is something to feel good about serving your kids.

This easy and quick 30 minute weeknight meal is just the recipe to try with your kids. I have the ability to pick organic noodles, grass fed beef, real butter, etc. I love knowing exactly what I am putting on the table. If you really want it to be from scratch you can make a homemade cream of mushroom soup to add in.

These ingredients are almost always in my fridge and pantry. It’s a go to on nights where eating out is tempting. I can always throw this together and not hear any complaints.

Ingredients

Ground Beef- You could easily substitute the ground beef for ground chicken or turkey.

Onion- For picky eaters substitute the diced onion for onion powder.

Egg Noodles- If you don’t have egg noodles on hand you could easily substitute for a noodle of your choice.

Beef Broth- I always keep broth on hand but if you find yourself without it, I would add some beef bouillon to some water as a substitute.

How to Make Beef Stroganoff Hamburger Helper

Step 1: In a large skillet over medium high heat cook the beef, onion, and garlic. Drain and leave to the side.

Step 2: Add butter to pan and let melt. Add flour, stir and let it absorb the butter. Next add the beef broth and whisk vigorously to remove any lumps. Turn the heat up to high and bring to a boil for 2-3 minutes until it thickens slightly.

Step 3: Bring the temperature down to medium and add in the sour cream and cream of mushroom soup. Allow it to get hot.

Step 4: Add the meat mixture back and give it a good stir.

Step 5:Cook egg noodles according to package and stir into the sauce.

Step 6: Enjoy!!!

Tips

  • Start boiling the water for your noodles first. It will allow the sauce and noodles to get done around the same time to be sure your supper is finished within 30 minutes.
  • If gluten is an issue. you can easily make this gluten free. Use a gluten free noodle, the pacific brand GF cream of mushroom, and a 1:1 AP Flour.
  • This recipe is a go to meal when I didn’t plan ahead. Easily sub out the noodles for another type or the meat for ground chicken or turkey.
  • When reheating leftovers I find it best to reheat stovetop with some milk.

Ingredients

  • 1 pkg egg noodles
  • 1 lb ground beef
  • 1 small onion chopped
  • 1 tsp minced garlic
  • 3 TBSP butter
  • 3 TBSP All Purpose Flour
  • 1 1/2 cups beef broth
  • 1 cup sour cream
  • 1 can cream of mushroom soup
  • 1/2 tsp black pepper
  • 1 tsp salt, more to taste

Instructions

  1. Boil egg noodles according to the instructions on the bag and set aside.
  2. In a large skillet over medium to high heat, brown ground beef along with onions and garlic.
  3. Drain the meat mixture and remove from the pan.
  4. Add butter to the pan and let melt. Add flour and stir so it absorbs the butter.
  5. Next add the beef broth and whisk vigorously to remove any lumps. Turn heat up to high and bring to a boil for 2-3 minutes until it thickens slightly.
  6. Bring temperature down to medium and whisk in the sour cream and cream of mushroom soup. Allow it time to get hot and then add the meat mixture back in.
  7. Add in the salt and pepper, taste for salt level and add to your liking. Stir in the noodles and serve!

Notes

  • You do not have to stir in the noodles. You can top noodles with the meat sauce if that is your preference. This would allow you to store the noodles and sauce seperately. I prefer them mixed together.
  • When reheating add some milk and reheat stovetop for best results.
