Bruschetta is such a classic Italian appetizer. You find it on the menu of so many Italian restaurants. It’s so beautiful it may make you think it’s hard to make. It is quite the opposite! Bruschetta could not be an easier recipe to make!

We had my father in laws birthday gathering last night and I knew he had asked for Italian. I made my bruschetta for the first time and it was a hit. The best part it only took me maybe 20 minutes total to create such a beautiful appetizer to eat.

The tomatoes and fresh basil give this recipe such a fresh and light bite. Once you layer that perfectly crispy bread, the cheese, the tomatoes and then top it with the balsamic your guest will be so impressed by the combination of all those wonderful flavors! You do not have to have any cooking ability to make this delicious recipe. Your guest however will think you are a gourmet chef! This bruschetta is the ultimate show stopping dish for any party or celebration!

  • Cream Cheese- Its best to use whipped cream cheese for the texture. However if you can’t find it regular cream cheese will work fine.
  • Garlic- If you prefer to use fresh garlic I would use one clove minced.
  • Bread- I use French loaf because I like my bread a little softer. If you like a crispier bread I would switch it out for a baguette.

How to Make Bruschetta

  • Step 1- Use a hand mixer to combine the feta cheese crumbles and whipped cream cheese.
  • Step 2- Dice the grape tomatoes into small pieces. I cut mine anywhere from 4ths to 8ths depending on the size of the tomatoes.

  • Step 3- Add olive oil, basil, and salt into the tomatoes. Suggested measurements are on the recipe card. Use your own discretion with the amount based on your taste.
  • Step 4- Slice bread, brush with olive oil, and sprinkle with salt and pepper. Bake at 350 degrees for 10-15 minutes depending on how crispy you prefer it.

  • Step 5- Assemble the bruschetta! Add a layer of the cheese mixture, spoon on the tomatoes, drizzle with balsamic glaze and garnish with basil!

Tips for making Bruschetta

  • Bring the feta cheese and whipped cream cheese to room temperature before combining them.
  • If you like softer bread use French loaf. For a crispier bread use a baguette.
  • The basil can be fresh or dried. The flavor and texture will be better if you are able to use fresh basil.
  • If you have fresh garlic instead of minced garlic I would suggest using 1 clove per 10 oz container of tomatoes.
  • If you don’t have a balsamic glaze you can easily make your own for the topping.

Ingredients

  • French Loaf
  • 1 Container Whipped Cream Cheese
  • 1 Container Traditional Feta Crumbles
  • Olive Oil
  • Salt & Pepper
  • 10 oz Container Grape Tomatos
  • 1/2 tsp Minced Garlic
  • 1/2 tsp Salt
  • 1 Tbsp Chopped Basil
  • Balsamic Glaze

Instructions

  1. Let your cream cheese and feta cheese come to room temperature. In a small bowl use a hand mixer to blend the two cheeses into a smooth spread.
  2. Dice grape tomatos into small pieces. Whatever size is your personal preference, I prefer mine very small.
  3. To the tomatos add 1 Tbsp olive oil, 1/2 tsp minced garlic, 1/2 tsp salt, and 1 Tbsp chopped basil. This is all too taste. You can add to it if you would like more of a certain flavor or start out with less to be on the safe side.
  4. Once you are ready to assemble and eat, preheat oven to 350. Slice bread, brush with olive oil, sprinkle with salt and pepper. Bake on a baking sheet lined with foil for 10-15 minutes. Depends on how crunchy you like your bread.
  5. To assemble spread cheese mixture onto bread, top with spoonfuls of tomatos, drizzle with balsamic glaze, and garnish with more basil. It is such a fresh delicious dish!

Notes

  • It is easier to combine the cream cheese and feta if you let them come to room temperature first.
  • You can use fresh basil or dried basil in your tomato's.
  • I use a french loaf because I don't like my bread to be too hard but you can also use a baguette.
  • For those who don't love feta cheese it is still delicious without the cheese mixture.
  • It makes way more cheese mixture than tomatos, If you are trying to feed a crowd at a party I would double the tomato mixture.
